摘要
蓝莓花青素作为抗氧化物质,具有很强的保健作用,也越来越受人民群众的欢迎。蓝莓果实中的花青素以糖苷类化合物存在,分别是矢车菊素、飞燕草素、锦葵素、矮牵牛素、天竺葵素、芍药素6种。农业部、地方组织建立了蓝莓及其提取物中花青素的检测标准,有比色法、分光法、液相色谱法、质谱法等。本文综述了近年来国内外文献中蓝莓花青素的检测方法和研究,为蓝莓花青素及其提取物的检测技术的开发和制标提供参考。
Blueberry anthocyanins as antioxidants,has a strong healthy fuction as well as becoming more and more popular among the people.Anthocyanins in blueberry fruits are anthocyanidins,which contain cyanidin,delphinidin,anthocyanin,Petunia,pelargonidin and paeoniflorin.The Ministry of agriculture and local organizations have established the detection standards of anthocyanins in blueberry and its extracts,including colorimetry,spectrophotometry,liquid chromatography,mass spectrometry,etc.In this paper,the detection methods and research progress of blueberry anthocyanins in domestic and foreign literatures in recent years were reviewed,which provided reference for the development of detection technology and standard preparation of blueberry anthocyanins and their extracts.
