摘要
唐朝是中国历史上最为繁盛的朝代之一,而唐朝饮食上的繁荣发展,在整个中国烹饪发展史里也占据着极为重要的地位,出现了许多突出特点,如菜品制作方式由粗变细、调味技法上更加高超、饮食文化交流更加频繁、饮食方式产生较大转变、饮用品飞速发展、食疗体系初步建立、宗教特色浓郁和宴会形式多样等。本文主要围绕唐代饮食的这些突出特点展开,以探究其在中国烹饪发展史上所发挥的关键作用。
The Tang Dynasty is one of the most prosperous dynasties in Chinese history,and the prosperity and development of the Tang Dynasty’s diet also occupies an extremely important position in the entire history of Chinese cooking.There have been many outstanding features,such as the change of cooking methods from coarse to finer,more sophisticated seasoning techniques,more frequent exchanges of food culture,major changes in eating styles,rapid development of drinking products,preliminary establishment of diet therapy system,rich religious characteristics and banquets various forms,etc.This article focuses on these outstanding characteristics of the Tang Dynasty’s diet,in order to explore its key role in the development of Chinese cuisine.
