摘要
赤藓糖醇是一种天然糖醇,具有良好的功能特性。由于赤藓糖醇单独使用时甜味感觉不明显,一般将其和高倍甜味剂复配后使用。从赤藓糖醇的性能、应用、甜味剂的种类、特性、选择以及共结晶工艺几个方面综述了近年来关于赤藓糖醇和其他高倍甜味剂共结晶提高其甜味感受的研究进展情况,最后对赤藓糖醇与高倍甜味剂结晶的研究进行了展望。
Erythritol is a natural sugar alcohol with good functional properties.However, due to its sweet taste is not obvious when used alone, people have studied the application of erythritol and high times sweetener in various foods.In this paper, the recent research progress of erythritol and other high power sweeteners cocrystallization to improve their sweet taste was reviewed.The characteristics and applications of erythritol, the types, characteristics and selection of sweeteners and the co-crystallization process of erythritol were described.Finally, the research on the crystallization of erythritol and high power sweeteners was prospected.
