摘要
以酶提取法提取晋谷21号中可溶性膳食纤维和多酚,并测定游离酚的含量、DPPH自由基清除能力以及还原能力;同时研究了可溶性膳食纤维的生理活性以及对戊糖乳杆菌的体外生长的影响。结果显示:可溶性膳食纤维的持水力为(6.46±0.11) g/g、持油力为(4.05±0.06) g/g、膨胀力为(1.01±0.04) m L/g。谷子游离酚的含量为(0.881±0.046) mg GAE/g,可溶性膳食纤维的游离酚含量为(0.675±0.028) mg GAE/g;谷子游离态多酚的DPPH清除能力以及还原能力均大于可溶性膳食纤维中的游离酚。谷子和可溶性膳食纤维中游离酚的DPPH自由基清除能力和质量浓度在一定范围内呈正相关性(R_(SDF)=0.631,R_(谷子)=0.698),谷子和可溶性膳食纤维中游离酚的还原能力和稀释倍数呈显著的负相关性(R_(SDF)=-0.944,R_(谷子)=-0.899)。当添加可溶性膳食纤维作为唯一碳源时,其对戊糖乳杆菌有体外增殖作用。
The soluble dietary fiber and polyphenols in Jingu 21 were extracted by enzyme extraction method,and the content of free phenol,DPPH free radical scavenging ability and reducing ability were determined;at the same time,the physiological activity of soluble dietary fiber and its effect on the growth of Lactobacillus pentosus in vitro were studied.The results showed that the water holding capacity of soluble dietary fiber was(6.46±0.11)g/g,the oil holding capacity was(4.05±0.06)g/g,and the swelling capacity was(1.01±0.04)m L/g.The free phenol content of Setaria italica was(0.881±0.046)mg GAE/g,and that of soluble dietary fiber was(0.675±0.028)mg GAE/g;DPPH scavenging capacity and reducing capacity of Setaria italica free polyphenols were higher than soluble dietary fiber.The DPPH free radical scavenging capacity and concentration of free phenols in Setaria italica and SDF were positively correlated within a certain range(RSDF=0.631,R_(millet)=0.698),and a negative correlation between DPPH radical scavenging ability and dilution ratio of free phenols in Setaria italica and SDF(RSDF=-0.944,R_(millet)=-0.899).When the soluble dietary fiber was added as the sole carbon source,it had a proliferation effect on Lactobacillus pentosus in vitro.
