阿克苏冰糖心苹果初生代谢物及矿质元素特征研究

摘要 采用GC-MS和HNO3-HClO4消煮法对阿克苏冰糖心苹果的糖心组织与非糖心组织的初生代谢物与矿质元素含量进行检测并分析其差异性。结果表明:在检测到的23种初生代谢物中,糖心组织的山梨醇、奎宁酸含量显著高于非糖心组织,苏氨酸、肌醇含量显著低于非糖心组织,苹果酸、蔗糖、苏糖酸含量极显著低于非糖心组织;在检测到的矿质元素中,糖心组织与非糖心组织N、P、K含量无显著差异,糖心组织Ca含量极显著高于非糖心组织。Ca含量与苹果酸、苏氨酸呈极显著负相关,K与P均与果糖、蔗糖呈显著或极显著正相关,其中P还与山梨醇呈显著负相关。研究认为,在糖心组织代谢过程中,山梨醇是主要的糖分积累形式,P元素可能在糖心形成过程中发挥重要作用。 GC-MS and HNO3-HClO4 digestion methods were used to detect the primary metabolites and mineral element contents of Aksu candied apple sugar heart tissue and non-sugar heart tissue and analyze their differences.The results showed that among the 23 primary metabolites detected,the contents of sorbitol and quinic acid in sugar heart tissue were significantly higher than those in non-sugar heart tissue,and the contents of threonine and inositol were significantly lower than those in non-sugar heart tissue.The contents of malic acid,sucrose and threonic acid were extremely significantly lower than those in non-sugar heart tissue;among the detected mineral elements,the content of N,P,and K in sugar-core tissue and non-sugar core tissues were not significantly different,The content of Ca was extremely significantly higher than that of non-sugar heart tissue.The content of Ca was negatively correlated with malic acid and threonine,K and P were significantly or extremely significantly positively correlated with fructose,sucrose,and P was significantly negatively correlated with sorbitol.Studies believe that sorbitol is the main form of sugar accumulation in the process of sugar core tissue metabolism,and P elements may play an important role in the process of sugar core formation.
