摘要
食品安全监督抽检和风险监测是预防和减少食品安全事故发生,切实保障人民群众食品安全的有效手段,抽样时准确选择样品类别,并能依据相关标准做出正确判定,对于抽检工作至关重要。本文选取了青团、年糕、叉烧包、粽子、凉皮几类传统食品和油炸红枣、枣夹核桃、混合水果麦片几种近几年市场上的流行食品,对其分类和判定中时存在的问题进行分析,得出确定食品分类时不能只考虑食品名称或生产许可类别,还要结合执行标准、配料表、生产工艺等进行综合分析,同时按照抽检实施细则规定的检测方法进行检测,依据相关标准中对应类别的限值进行判定,为承检机构的食品分类和判定提供参考,从而降低食品安全抽检工作的风险,提高抽检工作的质量。
Sampling and risk monitoring of food safety supervision is an effective means to prevent and reduce food safety accidents and effectively protect people’s food safety.It is very important for sampling to accurately select sample categories and make correct judgments according to relevant standards.This paper analyzes the problems existing in the classification and determination of traditional foods such as Green League,New Year cake,barbecued pork bun,zongzi,cold rice noodles,and popular foods such as fried jujube,jujube with walnut,mixed fruit cereal in recent years.It is concluded that the food classification should not be judged only by the food name or production license category,but also should be comprehensively judged in combination with the implementation standards,ingredient list,production process,etc.,and inspection should be carried out in accordance with the testing methods specified in the implementation rules of sampling inspection,and judgment should be made according to the limit values of corresponding categories in relevant standards.It can provide reference to classify and determine food for the inspection agencies,so as to reduce the risk of food safety sampling inspection and improve the quality of sampling inspection.
