西方许旺酵母及其工业应用概述

An Overview of Schwanniomyces occidentalis and Its Industrial Application

含淀粉的原材料价格低廉、来源广泛,而淀粉的分解是啤酒酿造和饮用酒生产等重要工业过程的基础。西方许旺酵母最初由于其出色的淀粉降解能力而受到广泛关注。文章综述了目前国内外学者对西方许旺酵母的研究现状,重点介绍了西方许旺酵母的生理生化特性及其在生物技术和工业生产中的应用。

Starch-containing materials are cheap and widely available,decomposition of starch is the basic process of important industrial productions,such as beer brewing and drinking wine production.Schwanniomyces occidentalis is equipped with an extremely powerful amylolytic system and attracts extensive attention worldwide.In this paper,The current research about S.occidentalis,with emphasis on the physiological and biochemical characteristics,as well as applications in biotechnology and industry were reviewed.
