摘要
以发芽富硒糙小米为试材,测定发芽富硒糙小米生物活性成分含量、醇提物及蛋白抗氧化活性的变化。结果表明:与发芽糙小米相比,发芽富硒糙小米的黄酮、多酚、谷维素、类胡萝卜素、总硒、蛋白中硒含量均有大幅度提升,分别为(10.48±0.30)mg/g、(8.80±0.09)mg/g、(2.03±0.05)mg/g、(8.48±0.15)μg/g、(920.00±20.00)μg/kg、(3135.00±38.00)μg/kg。发芽富硒糙小米醇提物及蛋白的1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率、羟自由基(·OH)清除能力、超氧阴离子自由基(O2^(–)·)清除率以及还原力显著高于发芽糙小米醇提物及蛋白(P<0.01)。
Using germinated selenium-enriched brown millet as the test material,the content of biologically active components,alcohol extract and protein antioxidant activity of germinated selenium-enriched brown millet were measured.The results demonstrated that compared with germinated brown millet,the content of flavonoids,polyphenols,oryzanol,carotenoids,total selenium,and selenium content in protein of germinated selenium-enriched brown millet were greatly increased,respectively (10.48±0.30)mg/g,(8.80±0.09)mg/g,(2.03±0.05)mg/g,(8.48±0.15)μg/g,(920.00±20.00)μg/kg,(3135.00±38.00)μg/kg.DPPH free radical scavenging activity,hydroxyl radical scavenging activity,superoxide anion free radical scavenging activity,and reducing power of alcohol extract and protein of germinated selenium-enriched brown millet were significantly higher than alcohol extract and protein of germinated brown millet (P<0.01).
