摘要
采用响应面优化超声波辅助法提取鹰嘴豆油的工艺,并研究对力竭运动大鼠心肌脂质过氧化的影响。最佳工艺条件,液料比为13∶1(mL/g)、超声功率为160 W提取温度为41℃,在此工艺条件下做3次平行实验,得出鹰嘴豆油提取率为69.72%。与预测值相近,表明该条件是可行的。同时大鼠力竭运动实验表明,大鼠灌胃鹰嘴豆油可以使得CAT、GSH-Px、SOD活性明显提高,MDA水平明显降低,说明鹰嘴豆油可以提高抗氧化酶活性,清除大鼠体内产生大量的自由基,从而减少脂质过氧化产物对大鼠的影响。
Response surface methodology(RSM)was used to optimize the ultrasonic assisted extraction of chickpea oil,and its effect on myocardial lipid peroxidation was studied.The optimum conditions were as follows:the ratio of liquid to material was 13∶1(mL/g),ultrasonic power was 160 W,extraction temperature was 41℃.Under these conditions,the extraction rate of chickpea oil was 69.72%,closing to the expected value,indicating that the conditions were feasible.At the same time,the exhaustive exercise test indicatedthat chickpea oil could significantly increase the activities of cat,GSH PX and SOD,and significantly reduce the level of MDA,which indicated that chickpea oil could improve the activity of antioxidant enzymes and scavenge a large number of free radicals in rats,hence,reducing the effect of lipid peroxidation products on rats.
