婴幼儿辅食营养包铁及VC补充剂优化稳定性效果分析

摘要 考察对比了4种婴幼儿辅食营养包铁剂的感官品质及与VC或VC钠优化组合的稳定性情况。将营养包配方样品(分别含铁剂:富马酸亚铁、FeSO_(4)、FeSO_(4)+VC、FeSO_(4)+VC钠)分成4组放在恒温恒湿箱中,通过高温、高湿和强光照影响因素试验、加速试验和“简单描述检验”的感官评价法,对其中铁和VC的化合物添加类别和营养包的感官特性进行优化,并对产品稳定性进行考察,以感官评价、VC含量测定作为指标对样品进行综合评价。结果表明:影响因素试验(高温、高湿、强光照)对4种样品0、5和10d感官方面在色泽外观、滋味气味、口感和冲调性上没有显著性差异,除富马酸亚铁组出现红褐色沉淀明显外,FeSO_(4)、FeSO_(4)+VC、FeSO_(4)+VC钠组均未出现肉眼可见的沉淀,但FeSO_(4)+VC、FeSO_(4)+VC钠组的VC含量下降程度明显;加速稳定试验结果也相似。婴幼儿辅食营养包FeSO_(4)与VC或VC钠的优化组合感官性良好,彻底避免了铁剂沉淀问题,但对VC和VC钠的稳定性和强化量方面还需要进一步完善。 The sensory quality of 4 kinds of iron-containing supplements for infants and young children and the stability of their optimal combination with VC or VC sodium were investigate and compared.The nutrition package formula samples(containing iron agent ferrous fumarate,FeSO_(4),FeSO_(4)+VC,and FeSO_(4)+VC Sodium respectively)were divided into four groups in box with constant temperature and humidity,through high temperature,high humidity and strong light factors affecting test,accelerated test and“simple description test”sensory evaluation,the adding category of iron and vitamin C compound in nutrition package and sensory properties of nutrition package were optimized,and the stability of the product was investigated.Having sensory evaluation and determination of vitamin C as indicators,nutrition package samples were evaluated comprehensively.The results showed that factors affecting test(high temperature,high humidity and strong light)had no significant difference among 4 nutrition package samples with 0,5and 10d in color appearance,smell,taste,taste sensory and dissolving quality aspects,except appearance of reddish brown precipitate in ferrous fumarate group,FeSO_(4),FeSO_(4)+VC and FeSO_(4)+VC Sodium group had no visible precipitation occurred,but content of VC in FeSO_(4)+VC and FeSO_(4)+VC Sodium group decreased significantly;The accelerated stability test results are also similar.The optimal supplement of FeSO_(4) and VC or VC Sodium in infant nutrition package has good sensory performance and completely avoids the problem of red precipitation of iron agent.However,the stability and strengthening amount of vitamin C and vitamin C sodium need to be further improved.
