摘要
为获得同时富含α-亚麻酸(ALA)、二十碳五烯酸(EPA)、二十二碳六烯酸(DHA)等长链多不饱和脂肪酸的功能食品。以牡丹籽油和鱼油为芯材,以微囊包埋率为响应值对牡丹籽油-鱼油微囊的配方进行响应曲面优化并且对最优配方微囊进行性能表征。其结果显示,微囊最优配方条件为:海藻酸钠浓度1.5%、明胶浓度2.8%、黄原胶浓度0.55%、芯材添加量1.5%,可使微囊包埋率的理论值达到81.7%。验证值平均为80.26%。气相色谱分析可知微囊中总不饱和脂肪酸含量83.5%,其中α-亚麻酸含20.5%、EPA含8.29%、DHA含5.34%。通过粒度仪、扫描电镜、红外光谱以及热重分析显示微囊平均粒径为277.4μm且形态良好没有出现破损现象,热稳定性良好200℃以下能很好保护芯材。最终得到多不饱和脂肪酸含量高、种类丰富且各项性能指标良好的微囊产品。
The purpose is to obtain functional foods rich inα-linolenic acid(ALA),eicosapentaenoic acid(EPA),docosahexaenoic acid(DHA)and other long chain polyunsaturated fatty acids.Taking peony seed oil and fish oil as core materials,the response surface was optimized for the formula of peony seed oil-fish oil microcapsules with the embedding rate as response value,and the performance of the optimal formula microcapsules was characterized.The results showed that the optimal formulation conditions of the microcapsules were as follows:sodium alginate concentration of 1.5%,gelatin concentration of 2.8%,Xanthan gum concentration of 0.55%,and core material added amount of 1.5%.The theoretical value of the embedding rate of the microcapsules could reach 81.7%.The average validation value was 80.26%.Gas chromatographic analysis showed that the total content of unsaturated fatty acids in the microcapsules was 83.5%,among which alpha-linolenic acid,EPA and DHA contained 20.5%,8.29%and 5.34%respectively.By particle size analyzer,SCANNING electron microscope,INFRARED spectrum and thermogravimetric analysis,the average particle size of the microcapsules was 277.4 m,and no damage was observed.The core material was well protected under200℃with good thermal stability.Finally,a microcapsule product with high polyunsaturated fatty acid content,rich varieties and good performance indexes was obtained.
