海藻酸钠涂膜在食品加工中的应用

摘要 海藻酸钠作为一种提取物的副产品,多糖类,具有药物制剂辅料所需要的稳定性质、溶解性质、黏性以及安全性,被广泛用于食品工业以及医疗行业。随着生活水平提高,人们对于饮食健康的要求显著提升,如何保证食品质量、延长保质期、减少加工物质对人体的损害,成为当前的研究重点。而海藻酸钠被膜作为一种天然加工产物,其在多个行业具有良好的应用前景。文章介绍了海藻酸钠的理化特点,并综述了海藻酸钠涂膜在食品加工中的应用,以期为相关人员提供工作建议。 As a by-product of extract,sodium alginate is a kind of polysaccharide,and has the stability,solubility,viscosity and safety required by pharmaceutical excipients.Therefore,sodium alginate is widely used in food industry and medical industry.With the improvement of people's living standards,people’s requirements for healthy diet are significantly improved.How to ensure the quality of food,extend the shelf life and reduce the damage of processed materials to human body has become the current research focus.As a natural product,sodium alginate film has good application value in various industries.Based on this,this paper will review sodium alginate,and review the application of sodium alginate coating in food processing,in order to provide work suggestions for more personnel.
