通风收虫装置在偏高温大曲储存过程中的应用研究

摘要 以偏高温大曲为研究对象,利用通风收虫装置对传统曲药储存室进行改造,对比分析了大曲在储存过程中损耗率和各项理化指标的变化规律。结果表明,改造后的曲药储存室储存6个月曲药损耗率由传统储存室的15.48%降低到5.23%,降低10.25个百分点,表明对曲虫的防治和降低曲药损耗效果显著。通过理化指标数据的分析,改造前后大曲的理化指标变化趋势基本一致,储存3~6个月最适合白酒生产。该方法对白酒行业有着较高的推广应用前景。 In this study the ventilating and insect-catching device was adopted to reform the traditional Daqu storage room,and the change rules of the physicochemical indexes and loss rate of Daqu in the storage process were analyzed.The results showed that the loss rate of Daqu was reduced from 15.48%to 5.23%,proving that the device had significant effect on the control of insects in the storage room.The physicochemical indexes of Daqu showed basically the same change trend before and after the adoption of the device,and the Daqu stored for 3 to 6 months was most suitable for Baijiu production.The method has good promotion and application prospect in Baijiu industry.
