摘要
水果玉米作为一种新型的中高档果蔬食品,近年来在我国的产量和消费量均发展迅速。综述了水果玉米的采后品质变化,以及保鲜处理中不同的预处理方式、保鲜技术和工艺条件的研究现状,以期为水果玉米的研究和进一步开发利用提供参考,并指出存在问题和发展方向。
As a new type of mid and high-grade produce,the output and consumption of fruit corn has developed rapidly in China in recent years.In this paper,the changes of post harvest quality of fruit corn,as well as the research status of different pretreatment methods,fresh-keeping technology and technological conditions in fresh-keeping treatment were summarized,in order to provide reference for the research and further development and utilization of fruit corn,and pointed out the existing problems and development direction.
