摘要 百合是百合属多年生草本球根植物,其鳞茎兼具药食同源功效[1],由于其含有甾体皂苷、生物碱、多糖等活性成分[2],具有免疫调节、降血糖、抗氧化等疗效[3-4]。新鲜百合含水丰富且容易腐败变质,同时百合粗加工制成的百合干等初级产品存在科技含量低下、市场吸引力弱的诟病,这些原因制约了百合产业的发展。如今谷物类粉体冲调食品正在蓬勃兴起,粉体类食品方便快捷且营养丰富的特点备受消费者青睐,为此我们期望利用百合优化配方生产速溶复合百合粉。文章探讨了百合原辅料通过干燥、粉碎、制粒等工艺生产速溶复合百合粉的工厂设计,包括厂址选择、工艺流程、生产设备选型等,为规模化生产提供了相关实际参考。 Lilium brownii is a perennial herbaceous bulbous plant of the genus Lilium.Its bulb has the function of homologous medicine and food[1].Because it contains active ingredients such as steroidal saponins,alkaloids and polysaccharides[2],it has the effects of immune regulation,hypoglycemia and antioxidation[3-4].Fresh Lilium brownii is rich in water and easy to deteriorate.Meanwhile,the primary products such as dried lilies,which are made by rough processing of lilies,having the problems of low technological content and weak market attraction,these reasons restrict the development of lily industry.Nowadays,grain powder blended food is booming,and the characteristics of powder food are convenient,fast and nutritious,which are favored by consumers.Therefore,we expect to use the optimized formula of lily to produce instant compound Lilium brownii powder.The design of plant for producing instant compound Lilium brownii powder with raw materials and auxiliary materials by drying,crushing and granulating,including site selection,process flow and production equipment selection,etc.,which have provided relevant practical references for large-scale production.
