摘要
试验以苹果渣为原料,利用超声波提取根皮苷,并进行单因素试验和正交试验,确定提取的最佳工艺。使用大孔树脂纯化根皮苷,并通过吸附试验和解吸试验确定大孔树脂纯化的最佳工艺参数。利用复凝聚法结合冷冻干燥技术制备微胶囊,并进行单因素试验和正交试验,确定最佳工艺条件。结果表明,超声波提取最佳工艺条件为乙醇体积分数80%、料液比1∶40(g/mL)、提取时间3 h、提取温度75℃。微胶囊化的最优工艺为搅拌速度350 r/min、pH 4.5、芯壁比2∶1、壁材的质量分数2.0%;在此条件下,包埋率为79.8%,可形成稳定的微胶囊结构。
In this experiment,apple pomace was used as raw materials to extract phlorizin by ultrasonic extraction,and single factor experiment and orthogonal experiment were carried out to determine the best extraction process.The microencapsulation was prepared by the complex coacervation method combined with freeze-drying technology,and single factor experiment and orthogonal experiment were carried out to determine the best technological condition.The optimal process conditions for ultrasonic extraction were 80%ethanol volume fraction,1∶40(g/mL)liquid-to-liquid ratio,3 h extraction time,and 75°C extraction temperature.The optimal process for microencapsulation was a stirring speed of 350 r/min,pH 4.5,a core-to-wall ratio of 2∶1,and a mass fraction of wall material of 2.0%.Under the optimal process,the embedding rate was 79.8%,and the stable microcapsule structure was formed.
