山莓茎抗氧化及抑制亚硝化作用 被引量:1

Antioxidant and Inhibitory Effect on Nitrosation of Rubus corchorifolius Stem

摘要 研究山莓茎不同极性萃取部位的抗氧化和抑制亚硝化活性。利用有机溶剂萃取法萃取得到石油醚、乙酸乙酯、正丁醇和水层4个不同极性萃取部位,采用DPPH法、ABTS法、铁还原力法评价各萃取部位的自由基清除能力和铁离子还原力;采用盐酸萘乙二胺法评价其对亚硝酸盐的清除率。结果显示,山莓茎各极性萃取部位均有抗氧化作用,乙酸乙酯层对DPPH自由基、ABTS自由基清除能力最强,正丁醇层的铁还原能力最强(p<0.05),抑制亚硝化作用的最强的是乙酸乙酯层(p<0.05)。该试验通过对山莓茎抗氧化和抑制亚硝化作用评价,为山莓茎进一步开发利用提供试验数据和参考依据。 To study the antioxidation and inhibition of nitrosation activity in different polar extracts from raspberry stem,petroleum ether,ethyl acetate,n-butanol and water layer were extracted by organic solvent extraction.DPPH,ABTS and Prussian blue method were used to determine the free radical scavenging and iron reducing power of extracts from Rubus corchorifolius Stem.The removal rate of nitrite was determined by naphthylethylenediamine hydrochloride method.The results showed that antioxidant activity in each polar extraction site of Rubus corchorifolius Stem,ethyl acetate layer had the strongest scavenging ability to DPPH free radical and ABTS free radical,and n-butanol layer had the strongest iron restoring force(p<0.05);The strongest inhibition of nitrosation was the ethyl acetate layer(p<0.05).The experimental data and reference basis for development and utilization of Rubus corchorifolius Stem are provided through the evaluation of antioxidation and inhibition of nitrosation.
