2018年广东省炒货食品及坚果制品安全状况结果分析 被引量:5

Analysis on the Safety Status of Roasted Seeds and Nut Products in Guangdong Province in 2018

摘要 为了解广东省炒货食品及坚果制品安全状况,及时发现食品安全隐患,为广东省食品安全监督提供科学依据。对2018年广东省炒货食品及坚果制品按照相关标准进行检验和评价,对检测结果进行统计学分析。结果表明,调查炒货食品及坚果制品5986批次,合格率96.98%(5805/5986),2015-2018年4年数据比较发现,2018年炒货食品及坚果制品的安全形势稳中向好;检出不合格项目是过氧化值、二氧化硫残留量、标签、酸价、大肠菌群、霉菌、铅、糖精钠、黄曲霉毒素B_(1)和甜蜜素,共计10项。其中,品质指标占不合格总项次最高达42.08%(77/183);其次,分别为食品添加剂22.40%(41/183)、标签14.75%(27/183)、微生物14.21%(26/183)、重金属5.46%(10/183);真菌毒素最少,只有1.09%(2/183)。花生制品的过氧化值和二氧化硫残留量超标比较严重,批发市场的整体合格率低于全省平均水平。广东省炒货食品及坚果制品安全状况总体较好,主要存在品质指标问题,炒货食品及坚果制品的质量安全控制仍需加强。 In order to understand the food safety situation of roasted seeds and nut products in Guangdong province,discover potential food safety hazards in time,and provide scientific basis for food safety supervision in Guangdong.The roasted seeds and nut products in Guangdong province in 2018 were examined and evaluated according to relevant standards,and the results were analyzed by statistical analysis.Results showed that about 5986 batches of roasted seeds and nut products food were investigated,and the qualified rate was 96.98%(5805/5986).Based on the data of four years(2015—2018),the safety situation of roasted seeds and nut products was obviously improved in 2018.A total of 10 items including peroxide value,sulfur dioxide,label,acid value,coliforms,mould,lead,saccharin sodium,aflatoxin B_(1) and cyclamate were unqualified.Among these unqualified items,quality indicators accounted for the highest,reaching 42.08%(77/183),followed by 22.40%(41/183)of food additives,14.75%(27/183)of food labels,14.21%(27/183)of microbial contamination,and 5.46%(10/183)of heavy metal.Mycotoxin accounted for the least,only 1.09%(2/183).The peroxide value and sulfur dioxide residue of peanut products were more serious in the unqualified products,and the overall qualification rate of the wholesale markets was lower than the average level of the whole province.The safety status of roasted seeds and nut products in Guangdong province was generally good,mainly with quality index problems.The quality and safety control of roasted seeds and nut products still needed to be strengthened.
