玉米醇溶蛋白基微胶囊水果保鲜复合涂层材料的制备及应用

摘要 以水果为代表的农产品在贮藏期间极易发生腐烂,从而造成了资源浪费.本文以天然产物玉米醇溶蛋白(Zein)、艾叶精油(AAE)和海藻酸钠(SA)等为原料,并结合反溶剂法和复凝聚法制备得到玉米醇溶蛋白基微胶囊(AAE@Z-SMs),再将AAE@Z-SMs与己内酰胺改性酪素(Ca-Cpl)复配得到复合涂层材料,最后将其应用于水果表面从而达到保鲜效果.结果表明,当SA用量为0.06%时,AAE@Z-SMs平均粒径约为537.9 nm,对AAE的包覆率和负载率分别可达77.6%和4.4%,在良溶剂中释放120 h的累计释放率为71.8%,表现出较好的控释能力.该复合涂层材料具有较好的稳定性及抗菌性,将其应用于水果保鲜时可有效抑制香蕉表面褐变、减小圣女果硬度下降幅度以及抑制苹果切块表面菌类生长.该研究可为生物质基功能型涂层材料的发展提供一定的参考和借鉴. Fruits,as typical agricultural products,are prone to decay during storage,which is a a waste of natural resources.In this paper,the anti-solvent precipitation technology and complex agglomeration methods were empolyed to prepare zein-based microcapsules(AAE@Z-SMs)by using zein,artemisia argyi essence(AAE)and sodium alginate(SA)as the raw materials.After the as-prepared AAE@Z-SMs were blended with casein modified by caprolactam(Ca-Cpl)to craft the composite coating material,the obtained composite coating material was applied to the surfaces of fruits for fresh-keeping.The results show that the average particle size of AAE@Z-SMs was 537.9 nm when SA was 0.06%,and the encapsulating and loading efficiency of AAE@Z-SMs to AAE were 77.6%and 4.4%,respectively.Meanwhile,the cumulative release rate of AAE from the microcapsules in good solvent was 71.8%at 120 h.The composite coating material has good stability and antibacterial property,and when it was applied to the fruit fresh-keeping,it can effectively inhibit the surface browning of bananas,and reduce the decrease in hardness of cherry tomatoes,and inhibit the growth of fungi on the surface of apple cut pieces.This research can provide a reference for the development of bio-based functional coatings.
