摘要
通过物性分析仪的质地多面分析(TPA)测试法对晚熟桃果实在短期室温贮藏过程中的质地变化进行研究,结果表明:随贮藏期的延长和压缩程度的增加,桃果实在硬度、黏着性、胶着性和咀嚼性这几个指标上的变化显著,在弹性、内聚性、回复性这几个指标上的变化不大;晚熟桃在短期室温贮藏1周左右质地变化显著,应尽快食用。
The changes of late maturing peach fruit quality during short-term storage at room temperature were researched by quality analysis(TPA)test of physical property analyzer.The result showed that with the extension of storage period and the increase of compression degree.The hardness,adhesiveness,adhesiveness and chewiness of peach fruit changed significantly.The indexes of elasticity,cohesiveness and resilience changed little.The quality of late maturing peach changed significantly after short-term storage at room temperature for about a week,so it should be eaten as soon as possible.
