摘要
市面上很多食品的加工过程都有亚硝酸盐的加入,亚硝酸盐不仅具有防腐败的功能。在一些肉质食品中,亚硝酸盐作为添加剂可以让食品看起来更加色泽鲜美。在不同类型食品中,亚硝酸盐作为添加剂的作用有所区别,但是大都有防腐功能。虽然亚硝酸盐是理想的食品添加剂,但是对人体的危害也不容忽视。其中最大的危害是长期或者大量摄入亚硝酸盐后,人体患癌的几率会大大增加。因此,食品中亚硝酸盐含量指标一直以来都是食品安全部门关注的重点。本文主要介绍了食品中亚硝酸盐成分检测的常用方法和最新的研究进展。
Many foods on the market are processed with nitrite,which not only has the function of anti-corruption.In some meat food,nitrite as an additive can make food look more delicious.In different types of food,the role of nitrite as an additive is different,but most of them have antiseptic function.Although nitrite is an ideal food additive,its harm to human body can not be ignored.One of the biggest hazards is that long-term or large intake of nitrite will greatly increase the risk of cancer.Therefore,nitrite content in food has always been the focus of food safety departments.This paper mainly introduces the common methods and the latest research progress of nitrite detection in food.
