摘要
试验旨在建立鉴别奶粉中淀粉掺伪的红外光谱法。通过对淀粉、奶粉和奶粉的淀粉掺伪样品进行红外扫描,确定淀粉的特征吸收峰为3500 cm^(-1)。利用酶水解法测定奶粉掺伪样品的淀粉含量,利用红外光谱分析法测定奶粉掺伪样品特征吸收峰处的吸光度,将样品的淀粉含量与特征吸收峰处的吸光度进行线性拟合,拟合方程为y=0.034x+0.582,相关系数为0.999。结果表明,利用红外光谱法鉴别奶粉的淀粉掺伪,准确、快速。
The purpose of this study was to establish an infra-red spectroscopy method for the identification of starch adulteration in milk powder.The samples of starch,milk powder and milk powder adulterated with starch were scanned by infra-red spectroscopy.The characteristic absorption peak of starch was 3500 cm^(-1).The starch content of adulterated milk powder samples was determined by enzymatic hydrolysis method,and the absorbance of adulterated milk powder samples at the characteristic absorption peak was determined by infra-red spectroscopy.The starch content of the sample was linearly fitted with the absorbance at the characteristic absorption peak.The fitting equation was y=0.034x+0.582,and the correlation coefficient was 0.999.The results showed that the identification of starch adulteration in milk powder by infra-red spectroscopy was accurate and rapid.
