摘要
以青钱柳叶为原料制备青钱柳叶速溶粉。以异槲皮苷含量和干膏率为评价指标,以料液比、提取时间和提取次数为考察因素,通过单因素试验和正交试验优选最佳提取工艺;以水分、溶解性为评价指标,考察真空度、干燥时间及干燥温度,确定最佳冷冻干燥工艺。结果表明:最佳提取工艺为料液比1∶20(g/mL),浸提2次,每次1 h;冷冻干燥最佳工艺参数为真空度90 Pa,干燥时间48 h,干燥温度-45℃。采用该工艺制备的青钱柳叶速溶粉气香味甜,在热、温、凉、冷水中均能迅速溶解,为青钱柳叶的开发利用提供了一条新途径。
Cyclocarya paliurus leaves were used as raw material to prepare Cyclocarya paliurus leaf instant pow-der.Isoquercitrin content and dry paste rate were used as evaluation indicators and solid-liquid ratio,extraction time,and number of extractions were used as investigation factors to optimize the extraction process using single factor and orthogonal tests.Moisture and solubility were used as evaluation indicators to examine the degree of vacuum,drying time,and drying temperature for determining the optimal freeze-drying process.The optimal ex-traction conditions were determined as follows:solid-liquid ratio was 1∶20(g/mL)and extraction number was two times,1 h each time,while the optimal freeze-drying parameters were determined as follows:vacuum degree was 90 Pa,drying time was 48 h,and drying temperature was-45℃.Cyclocarya paliurus leaf instant powder prepared using this process has a sweet smell and can be quickly dissolved in hot,warm,cool,and cold water,providing a new way for the development and utilization of Cyclocarya paliurus leaves.
