摘要
通过将白酒原酒分别贮存在陶坛、食品级304不锈钢罐中,并对其进行跟踪分析(包括感官分析及主要风味成分分析),剖析不同贮存容器对白酒原酒风味成分的影响,为科学、合理贮存原酒提供依据。
In this study,the base liquor was stored in pottery jars and stainless steel tanks respectively,and the sensory characteristics and main flavor components of the base liquor were tracked to explore the influence of different storage containers on the flavor components of Baijiu.The research results can provide basis for scientific storage of base liquor.
