摘要
针对养殖的甲壳类水产品多次被检出未使用呋喃西林但氨基脲质量分数超标的现状,为解决呋喃西林特征性代谢产物氨基脲内源性和外源性无法区分的问题,本文对氨基脲的本底质量分数、氨基脲来源与产生机制、呋喃西林代谢物残留检测技术等方面进行综述。通过对甲壳类产品中氨基脲本底质量分数、甲壳类产品中氨基脲来源及产生机制、呋喃西林代谢物残留检测技术、存在问题及展望进行综述,并对内源性氨基脲干扰导致的假阳性问题,寻找内源性氨基脲形成机制,筛选检测呋喃西林药物的标志物,建立有效的检测方法。该综述为后续研究呋喃西林代谢物的检测方法和解决氨基脲假阳性问题提供参考。
For breeding of shellfish aquatic products in which many times unused nitrofurazone was detected but semicarbazide excessive levels of the status qua,in order to solve the problem that nitrofurazone semicarbazide endogenous and exogenous characteristic metabolites can′t distinguish,in this paper,the background content of semicarbazide,semicarbazide sources and generation mechanism,nitrofurazone metabolite residues detecting technology,etc.,were summarized.Semicarbazide has been identified as a characteristic metabolite of nitrofurazone drugs and as a marker to monitor illicit use of nitrofurazone in food.After the use of nitrofurazone,the active drug degrades quickly in living organisms,and its metabolite,semicarbazide,combines with protein to form stable residues,which are referred to human through the food chain and harm human health.Semicarbazide from natural sources is found in crustacean products without using nitrofurazone,which seriously affects the effective implementation of aquatic product quality and safety supervision and law enforcement.Of shellfish products,crustaceans semicarbazide background content in the product source and generation mechanism,semicarbazide nitrofurazone metabolite residues detection technology,problems and prospects were reviewed.For the false positive problem caused by endogenous semicarbazide interference,it looks for endogenous semicarbazide formation mechanism,screening to detect markers of nitrofurazone drugs,and establishes an effective detection method.This review provides a reference for further research on the detection methods of nitrofurazone metabolites and solving the problem of false positive semicarbazide.
