Basically all rice varieties can be used to make sake,but Japanese people pursuit refined style of premium sake.For this reason most premium sakes use specially-developed types of sake-specific rice“Shuzo koteki main” that are better suited to brewing.Amongst all types of sakespecific rice,Yamadanishiki is known as the‘king'of sake rice varieties。
