摘要
随着现代社会发展和科技进步,中国传统白酒劳动密集型的酿造生产方式弊端愈发凸显:劳动强度大、过程粗放、精细化程度低,已难以适应时代发展,迫切需要做出改变。对传统白酒酿造生产工艺进行了总结,分析了传统酿造工艺目前遇到的问题,概述了目前中国白酒的机械化和现代化改造现况,介绍了白酒酿造工业化新技术和产品质量控制方法,并对中国白酒的发展方向进行了展望。
With the development of modern society and the progress of science and technology,the disadvantages of traditional Chinese liquor's labor-intensive production mode have become more and more prominent:the high labor intensity,extensive process and low degree of refinement,The mode of production of Chinese traditional liquor has been difficult to adapt to the development of the times,so it is urgent to make changes.In this paper,the traditional liquor brewing process was summarized,the problems of the traditional brewing process was analyzed,the current status of mechanization and modernization of Chinese liquor was summarized,new technology of Chinese Liquor brewing and the quality control method of product were introduced and the development direction of Chinese liquor was discussed.
