一起由产A和E型肠毒素金黄色葡萄球菌引起的网络配餐食品中毒实验室检测结果分析 被引量:5

Analysis on laboratory test results of Staphylococcus aureus producing enterotoxin A and E isolated from take-out food

摘要 目的分析北京市某区金黄色葡萄球菌引起的网络配餐食品中毒原因,查明污染来源,为食物中毒处理及制定网络配餐食品安全监管策略提供参考。方法根据病例定义进行主动搜索,对采集的可疑食品、用具涂抹、厨师手涂抹和患者粪便样品进行副溶血性弧菌、金黄色葡萄球菌、蜡样芽胞杆菌、沙门菌和致泻大肠埃希菌检测。对分离菌株进行金黄色葡萄球菌肠毒素检测、药敏试验和脉冲场凝胶电泳。结果食品、用具涂抹及厨师手涂抹样品共检出6株携带SEA和SEE型肠毒素的金黄色葡萄球菌,分为2种PFGE带型,属同一克隆群,且均对红霉素和克林霉素耐药。结论此次网络配餐食品中毒事件是由携带产毒(SEA和SEE)金黄色葡萄球菌厨师在食品加工过程中污染食品而引起的。 Objective To analyze the causes of food poisoning caused by Staphylococcus aureus in a district of Beijing,identify the pollution sources,and provide reference for the treatment of food poisoning and the formulation of food safety supervision strategies for take-out food.Methods Proactive searches were conducted according to case definitions,and samples of suspicious food,utensils,cook’s hands,and patient feces were collected for the test of Vibrio parahaemolyticus,Staphylococcus aureus,Bacillus cereus,Salmonella,and diarrheogenic Escherichia coli.Staphylococcus aureus enterotoxin(SEA-SEE) detection,drug sensitivity test and pulsed field gel electrophoresis were performed on the isolates.Results Six strains of Staphylococcus aureus with staphylococcal enterotoxin A and E were isolated from food,tool swabs and hand swabs.Two PFGE patterns were found in 6 Staphylococcus aureus strains which belonged to a same clone group and were resistant to erythromycin and clindamycin.Conclusion The poisoning was caused by the contamination in the processing of food by chefs carrying toxin-producing Staphylococcus aureus(SEA and SEE).
