摘要
以大蓟和莲子为原料,研制大蓟莲子复合饮料,并考察其对小鼠的运动耐力影响。以饮料的感官得分为评价指标,基于单因素试验结果,采取响应面法优化确定大蓟莲子复合饮料的最佳配方后,通过小鼠的力竭游泳时间与体内生化指标结果评价其对运动耐力的影响。结果表明,大蓟莲子复合饮料最佳配方为:大蓟提取液与莲子浆液的体积比为1.1∶1,蔗糖量3.8%,柠檬酸量0.3%,黄原胶量0.05%,羧甲基纤维素钠量0.15%,所得复合饮料呈米色,酸甜适中,莲子与大蓟气味协调,且静置未有明显沉淀。动物试验结果表明,中、高剂量的大蓟莲子复合饮料有助于延长小鼠的力竭游泳时间,加快运动时体内生成的乳酸代谢,并显著减少蛋白质分解,因此有助于增强机体的运动耐力,具有良好的抗运动疲劳效果。
The compound beverage of Cirsium japonicum DC.and lotus seed was prepared and its anti-fatigue activity in mice was studied.Using sensory score as the evaluation index,the optimal formula of compound beverage was obtained by response surface test drew from single factor test’s results.The effect of compound beverage on exercise endurance in mice was investigated by animal exhaustive time and biochemical index results in vivo.The results showed that the optimal formula of the beverage was:sucrose 3.8%,citric acid 0.3%,xanthan gum 0.05%,carboxymethyl cellulose sodium 0.15%and the volume ratio of Cirsium japonicum DC.extract and lotus seed seriflux 1.1∶1.Under the above conditions,the beverage has a beige color with an appropriate acidity and sweet taste,and the fragrance is a mixture of Cirsium japonicum DC.and lotus seed.No obvious precipitation or stratification was found during storage.The animal results showed that high dose of the compound beverage can prolong the exhaustive swimming time of mice,accelerated metabolism of BLA which was generated during the exercise,and obviously decreased protein degradation in vivo.It enhances the exercise endurance and has a better anti-exercise fatigue effect on mice.
