5个梨品种果实营养成分及抗氧化活性比较研究 被引量:7

Study on the nutritional composition and antioxidant properties of five pear varieties

摘要 对新疆库尔勒地区的‘早酥’‘雪花’‘砀山酥’‘库尔勒香梨’‘XH-07’5个梨品种的营养成分、活性物质及抗氧化性能指标进行了测定及比较分析。结果表明:‘库尔勒香梨’的维生素C含量最高(28.5mg/kg);‘雪花’梨的可溶性糖含量最高(5.97%);‘XH-07’梨的可溶性固形物含量(13.46%)、可滴定酸含量(0.37%)、总酚含量(0.63 mg/g)、花色苷含量(0.70 mg/g)、类黄酮含量(0.44 mg/g)及DPPH自由基清除率(85.96%)均显著高于其他品种,总体来看‘XH-07’梨利用价值较高。相关性分析表明,可溶性糖含量与DPPH自由基清除率呈显著负相关,总酚、类黄酮含量与DPPH自由基清除率均呈显著正相关,花色苷含量与DPPH自由基清除率呈极显著正相关,说明总酚、花色苷、类黄酮在梨果实抗氧化能力中发挥重要作用。 The nutrient components, active substances and antioxidant performance indexes of five pear cultivars, ‘Zaosu’ ‘Xuehua’ ‘Dangshansu’ ‘Korla fragrant pear’ and ‘XH-07’ pear in Korla area were measured and compared and analyzed. The results showed that ‘Korla fragrant pear’ had the highest content of vitamin C(28.5 mg/kg);‘Xuehua’ pear had the highest content of soluble sugar(5.97%);Soluble solid content(13.46%), titratable acid content(0.37%), total phenol content(0.63 mg/g), anthocyanin content(0.70 mg/g), flavonoid content(0.44 mg/g) and DPPH free radical scavenging rate(85.96%) of ‘XH-07’ pear were significantly higher than other varieties, the overall utilization value was higher. Correlation analysis showed that soluble sugar content was significantly negatively correlated with DPPH free radical scavenging rate, the contents of total phenols and flavonoid were significantly positively correlated with DPPH free radical scavenging rate, and anthocyanin content with DPPH free radical scavenging rate were extremely significant. It shows that total phenols, anthocyanins and flavonoids play an important role in the antioxidant capacity of fruits.
