甘肃省2018-2020年消毒餐(饮)具微生物检测结果分析

摘要 目的:了解甘肃省2018—2020年餐饮行业消毒餐(饮)具卫生状况,为监管部门的行政决策提供科学依据。方法:按照食品安全国家标准对2018—2020年抽检的消毒餐(饮)具进行微生物检测,并对检测结果进行汇总分析。结果:2018—2020年随机抽检甘肃省内消毒餐(饮)具分别为1603批次、2366批次、1598批次,其大肠菌群合格率分别为75.73%、77.64%、80.73%,且合格率冬季>春季>秋季>夏季,沙门氏菌合格率均为100%。结论:相关部门应严格监督消毒餐具卫生状况,完善餐饮单位消毒设施,提高餐饮具卫生质量。 Objective: To understand the sanitation status of disinfection tableware in the catering industry in Gansu province from 2018 to 2020, and to provide a scientific basis for the administrative decision-making of the regulatory authorities. Method: According to the national food safety standards, the disinfected tableware sampled from 2018 to 2020 were tested for microbiology, and the test results were analyzed. Results: Random random inspections of disinfection tableware in Gansu from 2018 to 2020 were 1 603 batches, 2 366 batches, and 1 598 batches. The qualified rates of coliform bacteria were 75.73%, 77.64%, and 80.73%, and the qualified rate in winter,spring,autumn,summer, the qualified rate of Salmonella was 100%. Conclusion: Relevant departments should strictly supervise the sanitation status of disinfected tableware, improve the disinfection facilities of catering units, and improve the sanitary quality of tableware.
