氯霉素在动物源食品中的残留分析研究进展 被引量:7

Research progress on residue analysis of chloramphenicol in animal-derived food

摘要 作为一种广谱抗生素,氯霉素因其良好的抗菌性能,曾被广泛应用到畜牧业及水产养殖中。但由于其严重的毒副作用,近年来美国、欧盟及中国等已禁止应用于动物疾病防治,规定在动物源性食品中不得检出。因氯霉素具有良好的抗菌性能,在养殖业中依旧存在违法滥用可能,并导致在动物性食品中残留。本文主要介绍了氯霉素残留的危害、残留现状及常见的检测方法,通过对比各种方法的优缺点及适用范围,为氯霉素残留分析选择检测方法及开发更高效的检测技术提供参考。 As a broad-spectrum antibiotic,chloramphenicol had been widely used in animal husbandry and aquaculture because of its good antibacterial properties.However,due to its serious toxic and side effects,US,EU,China and some other countries or regions had banned chloramphenicol application in preventing and combating disease of food-producing animals.Chloramphenicol mustn’t be detected in animal-derived food according to the above national regulations.However,because of its good antibacterial effect and low price,chloramphenicol is still likely to be abused in aquaculture and lead to residues in animal-derived food.This paper mainly introduced the harm,residue status and routine detection methods of chloramphenicol residues,and provided a reference for selecting detection methods for chloramphenicol residue analysis and developing more efficient detection technology by comparing the advantages and disadvantages of various methods and its applicable scope.
