珠芽魔芋不同球茎的品质比较 被引量:4

摘要 对引进自印度尼西亚的珠芽魔芋地下一年生球茎、地下多年生球茎以及叶面球茎进行分析,测定其水分含量、鲜重干重、精粉黏度、葡甘聚糖的含量以及分子质量。结果表明:地下一年生球茎粗精粉葡甘聚糖含量为57.0%,纯精粉葡甘聚糖含量为49.1%,精粉黏度为15 667 MPa·m,平均分子质量最小,为3.11×10^(-19 )g;地下多年生球茎葡甘聚糖含量最低,粗精粉葡甘聚糖含量为37.6%,纯精粉葡甘聚糖含量为38.6%,精粉黏度最大,为18 654 MPa·m,平均分子质量为3.32×10^(-19)g;叶面球茎葡甘聚糖含量最高,粗精粉葡甘聚糖含量为63.1%,纯精粉葡甘聚糖含量为67.8%,精粉黏度最小,为12 754 MPa·m,平均分子质量最大,为3.56×10^(-19)g。 To analyze the underground annual corms,underground perennial corms and foliar corms of a batch of Amorphophallus bulbifer from Indonesia,the moisture content,fresh and dry weights,viscosity of fine powder,glucomannan content and molecular weight were determined.The results show that:for the underground annual corms,glucomannan content is 57.0%in the coarse powder,and is 49.1%in the fine powder;the viscosity of the fine powder is 15667 MPa·m;the average molecular weight is the smallest at 3.11×10^(-19) g.The underground perennial corms have the lowest glucomannan content;glucomannan content in the coarse powder is 37.6%,and is 38.6%in the fine powder;the fine powder has the highest viscosity of 18654 MPa·m;the average molecular weight was 3.32×10^(-19)g.Foliar corms have the highest glucomannan content,which is 63.1%in the coarse powder,and is 67.8%in the fine powder;the fine powder has the smallest viscosity of 12754 MPa·m;the average molecular weight is the largest at 3.56×10^(-19)g.
