摘要
我国迈入老龄化社会后,老年人的健康和生活质量问题日益受到关注,特别是适合高龄老年人(80岁及以上)的食品缺乏问题尤其突出。通过对高龄老年人面临的社会和健康问题的分析,论述了其对食品营养、食物状态、食品包装特性的需求,并在食品原料、色香味、组织状态、加工方式的选择及食品套餐设计等方面提出了建议。
After China enters the aging society,the health and quality of life of the Oldest Old are increasingly concerned,especially the lack of food suitable for the Oldest Old(80 years old and above).Based on the analysis of the social and health problems faced by the Oldest Old,this paper discussed the requirements for food nutrition,food status and food packaging characteristics,and put forward suggestions on the selection of food raw materials,color and flavor,textures state,processing methods and food package design.
