碱液显色鉴别小麦皮色的方法研究

摘要 以小麦皮色对比的感官评分为评价指标,采用正交实验对NaOH溶液显色法鉴别小麦皮色的实验条件进行了优化。实验条件下,最优的测定条件为:浸泡温度50℃、NaOH溶液浓度5%(m/v)、浸泡时间2 min。各因素对小麦皮色鉴别的影响程度大小依次为:实验温度>NaOH浓度>浸泡时间。本方法可提高红、白小麦皮色差,提高小麦皮色鉴别的准确度。 The experimental conditions foridentifying wheat skin color by the NaOH solution color development method were optimized by orthogonal test,while the sensory score of wheat skin color contrast was used as the evaluation index.Under the experimental conditions,the optimal determination conditions are:soaking temperature 50℃,NaOH solution concentration 5%(m/v),soaking time 2 min.The influence degree of each factor on wheat skin color identification is as follows:experimental temperature>NaOH concentration>soaking time.The uptake of this method can improve the accuracy of wheat skin color identification by enhancing the color difference between red and white wheat skins.
