虾青素在水产养殖中的应用研究进展

虾青素是一种高价值的类胡萝卜素色素,广泛应用于水产养殖、食品、化妆品和保健品行业,红发夫酵母和雨生红球藻是虾青素重要的生物来源。虾青素具有改善水产动物体色、抗氧化和抗应激等功能,可为水生动物提供多种健康益处。文章就虾青素来源、理化性质及其在水产养殖中的应用进行了综述。

Astaxanthin is a high value carotenoid pigment renowned for its commercial application in aquaculture, food, cosmetics and health products. Phaffia rhodozyma and Haematococcus pluvialis are important biological sources of astaxanthin. Astaxanthin can improve the body color, anti-oxidation and anti stress of aquatic animals,and provide a variety of health benefits for aquatic animals. The origin of astaxanthin, physical and chemical properties and its application in aquaculture were reviewed in this paper.
