摘要
该文通过对民族志的研究,对内蒙古自治区乌兰察布地区面食文化中的莜面饮食民俗进行深入地分析与研究,主要包括莜面的来源,莜面美食的种类、制作方法,莜面的营养价值,以及与莜面有关的方言词语和民间习俗,由此反映出内蒙古乌兰察布地区面食文化中莜面饮食所具有的独特的文化内涵与文化意义。
Through the research on ethnography,this paper analyzes and studies the folk-custom of naked oat-based food in the cooked wheaten food in Ulanqab,Inner Mongolia in depth.The paper covers the source of naked oat,varieties and cooking methods of naked oat-based food,nutritive value of naked oat,and dialect words and folk custom related to naked oat,and thus reflect the unique cultural connotation and significance of naked oat-based food in the cooked wheaten food in Ulanqab.
