可食性涂膜在鲜切果蔬保鲜中的研究进展 被引量:13

摘要 鲜切果蔬具有新鲜、营养、卫生和方便等优点,深受广大消费者喜爱,正逐渐发展为现代果蔬消费的重要形式。果蔬营养物质丰富,含水量高,在加工过程中会造成组织液外流、失水、褐变、腐烂等,严重影响了鲜切果蔬的食用价值和经济价值。涂膜保鲜能有效改善鲜切果蔬的新鲜度,延长货架期,高效、天然、无毒的可食性涂膜及保鲜技术成为研究热点。本文论述了鲜切果蔬的品质劣变性状,综述了可食性涂膜在国内外鲜切果蔬保鲜技术中的研究进展,重点探讨了可食性涂膜对鲜切果蔬品质的影响,并对可食性涂膜保鲜技术进行了总结和展望。 Fresh-cut fruits and vegetables have the advantages of freshness,nutrition,hygiene and convenience,which are favored by consumers.It’s becoming an important form in modern fruit and vegetable consumption.Fruits and vegetables are rich in nutrients and high water content,which will cause tissue fluid outflow,water loss,browning,and rot due to microbial contamination during processing.It will seriously affect the edible and economic value of fresh-cut fruits and vegetables.The film preservation technologies can effectively improve the freshness of fresh-cut fruits and vegetables,and extend the shelf life of fresh-cut fruits and vegetables.Efficient,natural and non-toxic edible coating and preservation technologies of fresh-cut fruits and vegetables have become a research hotspot.In this paper,the deterioration on quality of fresh-cut fruits and vegetables was discussed.The research progress of edible coating in fresh-cut fruits and vegetables preservation technology at home and abroad was reviewed,in which focusing on the influence of edible coating on the quality of fresh-cut fruits and vegetables.The edible coating preservation technology was summarized and prospected.
