摘要
黄曲霉毒素有较强的毒性、致癌性和致突变性。粮食等作物在不当的储藏条件下容易霉变,产生黄曲霉毒素,霉变的食品中产生黄曲霉毒素高残留,严重威胁着人类的健康,其危害在食品加工和农作物储藏过程中尤为严重,因此对黄曲霉毒素的检测与防控是保障食品安全的重点。本文主要概述了国内外黄曲霉毒素的快速检测方法,尤其是近年来的新型技术和方法,对比分析了各种方法的优缺点,为合适检测方法选择提供依据,并对今后黄曲霉毒素检测方法的发展趋势进行了展望。
Aflatoxin has strong toxicity,carcinogenicity and mutagenicity.Under improper storage conditions,grains and other crops are likely to cause a large number of molds to grow and produce aflatoxins.Moldy agricultural products lead to high residues of aflatoxins,which seriously threaten human health.The hazards are particularly severe in the process of food processing and crop storage.Therefore,the detection and prevention of aflatoxins have become the focus of food safety.This article focused on the overview of the detection technologies of aflatoxin at home and abroad,especially the new detection technologies and methods in recent years.The advantages and disadvantages of each method were compared.It would provide a basis for the selection of suitable detection methods for aflatoxin,and prospect the development trend of the method.
