摘要
采用响应面优化超声波碱法提取奇亚籽蛋白,并探究力竭运动大鼠缺氧耐受力和红细胞功能的影响。提取奇亚籽蛋白的最佳工艺条件:pH 9.7、提取温度50℃、超声时间12 min。在此条件下,奇亚籽蛋白平均提取率为63.44%,与预测值接近。同时力竭运动大鼠试验表明:奇亚籽蛋白对脑缺氧或心肌缺氧有一定的积极改善作用,并且具有延长大鼠脑缺血性缺氧喘气时间的作用。奇亚籽蛋白由于具有较强的抗氧化能力,可以清除机体内的活性氧和产生大量的自由基,从而改善机体内红细胞功能,起到维持体内氧化-还原平衡的作用。
Response surface methodology(RSM)was used to optimize the ultrasonic alkali extraction of chia seed protein,and to explore the effects of exhaustive exercise on hypoxia tolerance and erythrocyte function in rats.The optimal technological conditions for extraction of chia seed protein were obtained as follows:pH 9.7,extraction temperature 50℃,ultrasonic time 12 min.Under these conditions,the average extraction rate of chia seed protein was 63.44%,which was close to the predicted value.At the same time,the experiment of exhausting exercise in rats showed that chia seed protein had a certain positive effect on improving cerebral hypoxia or myocardial hypoxia,and could prolong the gasping time of cerebral ischemic hypoxia in rats.Because of its strong antioxidant capacity,chia seed protein can scavenge reactive oxygen species and produce a large number of free radicals in the body,thus improving the function of erythrocyte in the body and maintaining the oxidation-reduction balance in the body.
