均质技术制备黑木耳多糖的研究

摘要 黑木耳是一种重要的食药用真菌,含有丰富的营养与功能性成分,其中木耳多糖具有降血糖、降血脂、抗氧化、抗血栓形成以及增强机体免疫力等功效。但是木耳多糖的分离制备方法以传统技术为主,提取效率低,周期长,因此现代技术的开发显得尤为重要。本试验以黑木耳为研究对象,采用响应面方法优化高压均质技术制备黑木耳多糖工艺。结果表明:均质时间25 min,均质压力25 MPa,料液比1∶76,黑木耳多糖得率可达(40.33±0.41)%提取效果显著优于传统水提技术。本试验的研究为促进黑木耳及其多糖资源的深度开发利用提供数据参考。 Auricularia auricula is an important edible and medicinal fungus,which is rich in nutrients and functional components.Auricularia auricula polysaccharide has the effects of hypoglycemic,hypolipidemic,antioxidant,antithrombotic and enhancing immunity.However,the separation and preparation methods of Auricularia polysaccharide are mainly based on traditional technology,with low extraction efficiency and long cycle,so the development of modern technology is particularly important.In this study,Auricularia auricula was used as the research object,and response surface methodology was used to optimize the preparation process of Auricularia auricula polysaccharide by high pressure homogenization technology.The results showed that the yield of Auricularia auricula polysaccharide was(40.33±0.41)%,the homogenization time was 25 min,the homogenization pressure was 25 MPa,and the solid-liquid ratio was 1:76.This study provides data reference for promoting the deep development and utilization of Auricularia auricula and its polysaccharide resources.
