摘要 奶酪是一种营养丰富的乳制品,富含蛋白质,脂肪,矿物质等,在其成熟过程中,会产生一些有活性的生物肽,本文对奶酪的营养价值及奶酪中生物活性肽进行研究,以期为相关药物开发提供思路。
