摘要
为明确工厂化栽培金耳的营养成分,评价其品质,按照国家检测和评价标准,对其主要营养成分、维生素B、矿质元素、类胡萝卜素、重金属、17种农药和3种致病菌进行检测和评价,结果如下:膳食纤维和粗多糖是金耳胶质的主要成分,是金耳物理特性和主要营养价值所在,含量占干重的53%;类胡萝卜素含量超过2000μg/100g;矿物质元素种类多、含量高,钾、铜、磷、硒、铁5种矿质营养元素的INQ值分别高达17.74、10.86、7.8、4.99和4.51;重金属含量均远低于国家控制标准;所测的17种农药和2种致病菌均未检出,大肠菌群的测得值<0.3 MPN/g,符合国家直接食用食品的标准要求,表明工厂化栽培金耳是一种营养价值高的绿色安全食品。
Based the Chinese National Standards of the nutrition analysis and quality evaluation,the contents of main nutrients,polysaccharide,VB,mineral elements,carotenoids,heavy metal,pesticides and disease-causing bacteria of industrial cultivated“Jiner”(Naematelia aurantialba)were analyzed and evaluated.Results showed“Jiner”is rich in dietary fiber and polysaccharides.The dietary fiber and polysaccharides are the main ingredients of the“Jiner”colloids.The content of carotenoids was more than 2000μg/100g.There were many kinds and higher contents of mineral elements.The INQ values of K,Cu,P,Se and Fe were 17.74、10.86、7.8、4.99 and 4.51 respectively.The contents of 5 kinds of heavy metal were lower than the Chinese National Standards.The 17 kinds of pesticides and 2 kinds of disease-causing bacteria had not been measured.The industrial cultivated“Jiner”is a safe and high nutritional value food.
