摘要
硒是人体必需的微量元素之一,是硒蛋白的必需组成成分,具有重要的生理功能,机体缺硒会导致许多疾病,补硒之路任重道远。膳食补硒是最科学有效的补硒方式,硒通过食物进入机体并参与机体的新陈代谢,发挥作用。文章根据近年来国内外的研究,概述了人们以植物,动物和微生物为载体获取富有机硒生物资源的方法和手段,发现硒在生物体内转化的过程中不仅能够提高机体硒含量,还对生物体生理性质和抗氧化性能等有所改善。最后,还探讨了膳食补硒的重要性,并提出了开发富硒强化剂的必要性,为国民补硒提供了新思路。
Selenium is one of the essential trace elements for the human body and an essential component of selenoprotein.It has important physiological functions.The lack of selenium in the body can cause many diseases.The road to selenium supplementation is long and long.Dietary selenium supplementation is the most scientific and effective way to supplement selenium.Selenium enters the body through food and participates in the body’s metabolism.This paper summarizes the methods that people use plants,animals,and microorganisms as carriers to obtain organic selenium-rich biological resources based on recent studies at home and abroad.It is found that selenium can not only improve the selenium content in the body during the transformation process in the organism,also improves the physiological properties and antioxidant properties of the organism.Finally,the importance of dietary selenium supplementation was discussed and the necessity of developing selenium-enriched fortifiers was proposed,which provided a new idea for people to supplement selenium.
