不同长度梗丝色度值与致香成分的变化及相关性分析 被引量:2

摘要 【目的】研究不同长度梗丝色度值与致香成分的变化及其相关性,为探讨梗丝结构对卷烟质量稳定性的影响以及利用色差法快速预测梗丝中的致香成分含量提供参考。【方法】利用烟丝振动分选筛对成品梗丝进行筛分,测定不同长度梗丝的色度值与致香成分;利用单因素方差分析和Pearson相关性分析研究不同长度梗丝色度值、致香成分的差异性以及色度值与致香成分的相关性。【结果】(1)对于同一等级烟梗制成的梗丝,不同长度梗丝的色度值及致香成分含量均存在显著性差异(P<0.05)和规律性变化。(2)梗丝长度由大到小,明度值(L^(*))、红度值(a^(*))、黄度值(b^(*))、饱和度(C)、色调角(H)及醇类、酯类致香成分含量总体呈降低的趋势,总色差值(ΔE)及醛类、酸类、酮类、烯类致香成分含量总体呈升高的趋势。(3)梗丝色度值L^(*)、a^(*)、b^(*)和C与醇类、酯类致香成分含量显著或极显著正相关,与醛类、酸类、酮类和烯类致香成分含量显著或极显著负相关;ΔE与醇类致香成分含量显著负相关,与烯类致香成分含量显著正相关;H与醇类致香成分含量显著正相关,与烯类致香成分含量显著负相关。【结论】不同长度梗丝的色度值与致香成分存在较大差异,且两者之间具有较强的相关性,提升梗丝在烟丝中的掺配均匀性对稳定卷烟品质具有重要意义,同时可以利用色差法快速预测梗丝中的致香成分含量。 [Purpose]Variations and correlation of chromaticity values and aroma components of different length cut stem were investigated in order to provide a reference for exploring the effect of cut stem structure on the stability of cigarette quality and calculating quickly aroma components contents in cut stems by chromatic aberration method.[Method]Cut stems were screened using cut tobacco shaker separator.Chromaticity values and aroma components of cut stems with different lengths were measured.One-way ANOVA and Pearson correlation analysis were used to study the differences of chromaticity values and aroma components of cut stems with different lengths,and the correlation between chromaticity values and aroma components.[Results](1)There were signific-ant differences(P<0.05)and regular changes in chromaticity values and aroma components content of different lengths of cut stem made from the same grade of stem.(2)With the decrease of cut stem length,lightness value(L^(*)),redness value(a^(*)),yellowness value(b^(*)),saturation(C),hue angle(H),and the contents of alcohols and esters aroma components decreased,the total chromatic aberration(ΔE)and the contents of aldehydes,acids,ketones and alkenes aroma components increased.(3)The chromaticity values of cut stem L^(*),a^(*),b^(*),C were significantly or extremely significantly positively corre-lated with the contents of alcohols and esters aroma components,and significantly or extremely signi-ficantly negatively correlated with the contents of aldehydes,acids,ketones and alkenes aroma com-ponents.TheΔE value had a significant negative correlation with the content of alcohols aroma com-ponents and a significant positive correlation with the content of alkenes aromatic components.The H value had a significant positive correlation with the content of alcohols aroma components and a sig-nificant negative correlation with the content of alkenes aromatic components.[Conclusion]There were significant differences in chromaticity values and aroma components contents of different length cut stems,and there was a strong correlation between chromaticity values and aroma components.Therefore,improving the blending uniformity of cut stem had great significance for stabilizing cigar-ette quality.In addition,chromatic aberration method could be used to rapidly predict the content of aroma components in cut stem.
