电子束辐照技术在食品工业中的应用现状及研究进展 被引量:13

Research Progress of Electron Beam Irradiation Technology and Its Application in Food Industry

摘要 作为一种非热加工技术,电子束辐照在医疗、材料、化工等各领域得到广泛应用。因其安全、高效、无污染、能够保持食品品质等特点,电子束辐照技术也在食品工业受到广泛关注。就电子束的形成、电子束辐照杀菌原理、电子束辐照在食品包装材料和食品加工领域应用进行综述,以期为拓宽电子束辐照技术在食品工业中应用提供理论支持。 As a non-thermal processing technology, electron beam(EB) irradiation had been widely used in medical treatment, materials, chemical industry and other fields. Compared with other irradiation methods, electron beam irradiation had been used as a clean and environmentally friendly technology for industrial food processing and was regarded as a potential novel non-thermal sterilization with a greater power utilization rate and a lower operation cost. The application of electron beam irradiation technology in the food industry was reviewed. The formation of electron beam and the principle of electron beam irradiation sterilization were introduced. The application of electron beam irradiation technology in the fields of food packaging materials and food processing were elaborated. The current development status of electron beam irradiation technology was summarized, and the future research directions were outlined.
