摘要
工程思维的训练和培养是中国工程教育环节中缺失的一环,系统案例教学法在食品加工生产线的思维下集成不同机械设备的功能和作用,实现食品工程专业课程的"落地式"教学。从改革现状、创新思路、方案集成和考核评价4个方面系统阐述"食品机械与设备"课程的教学改革与探索,探讨新形势下"食品机械与设备"课程教学新思路和新方法,以培养食品科学与工程专业学生的工程实践能力、创新能力和综合素质为目标,取得良好教学效果。
The training and cultivation of engineering thinking was missing in the field of engineering education in China. Systematic-case-based teaching method integrated the mechanisms and functions of different mechanical equipment under the thinking of food processing with the aim to realize the floor-to-ceiling teaching in food engineering course. State the teaching reformation of Food Machinery and Equipment in the aspects of reform situation, innovation thinking, project integration and evaluation. The novel thoughts and new methods applied to the teaching of Food Machinery and Equipment were discussed. The aim was to cultivate the abilities of engineering practice, innovation and comprehensive quality of students who majored in Food Science and Engineering. This teaching reformation had effectively achieved the goal to improve the teaching quality.
