摘要
以深州蜜桃为研究对象,分析不同成熟度果实常温(25℃±1℃)贮藏过程中呼吸速率、乙烯生成速率、品质指标和电子鼻响应情况。结果表明:贮藏期内果实成熟度(IAD值)、色度角(H)、硬度、可溶性固形物含量(SSC)和可滴定酸(TA)含量均呈降低趋势。同时,果实呼吸速率逐渐增强,乙烯释放速率先上升,至第3天时达最大值,然后降低。电子鼻响应值经主成分分析(PCA)、线性判别分析(LDA)和负载(Loading)分析结果显示,电子鼻可以对贮藏初值、第3天、第6天和第9天的深州蜜桃挥发性成分进行有效区分,其中传感器W1W、W2W、W5S、W1S、W2S对挥发性成分区分起主要作用。相关性分析表明,上述5个电子鼻传感器响应信号与果实的IAD值、色度、硬度、SSC和TA含量均呈极显著负相关(P<0.01)。上述结果为深州蜜桃成熟度分级以及使用电子鼻技术预测其贮藏期内品质变化提供了依据。
The respiration rates,ethylene production rates,quality indices and electronic nose responses of fruits with different maturity during storage at room temperature(25℃±1℃)were analyzed using Shenzhou honey peaches as materials in this study.The results showed that the maturity(IAD),hue angle(H),firmness,soluble solids contents(SSC)and titratable acid(TA)contents were decreased during storage,meanwhile,the respiration rates of fruits were gradually increased,while the ethylene production rates were improved to the maximum value on the third day and then decreased.The results of principal component analysis(PCA),linear discriminant analysis(LDA)and loading analysis showed that the electronic nose could successfully differentiate the volatile components of Shenzhou honey peaches stored for 0,3,6 and 9 days,and the sensors of W1W,W2W,W5S,W1S and W2S presented primary roles in distinguishing volatile components among samples.Correlation analysis indicated that these five response signals of electronic nose were significantly negatively correlated with the values of IAD,H,firmness and the contents of TSS and TA(P<0.01).These results would provide a basis for maturity grading of Shenzhou honey peaches and prediction of quality changes during storage by electronic nose technology.
