摘要
为了制备一款保留咖啡原有香气和口感的咖啡提取物,采取了分步提取的方法,先使用环己烷提取出馥郁咖啡香气的咖啡油,在咖啡粉碎目数为40目,环己烷与咖啡豆质量比为4︰1,回流时间90 min条件下,咖啡油得率为9.2%,然后采用动态循环提取技术提取咖啡渣中咖啡口感的浓缩液,去离子水与咖啡渣质量比为7︰1时,咖啡浓缩液得率为28.3%,结合乳化包埋技术将咖啡油和咖啡浓缩液组合为水油两溶咖啡提取物,大大提高了咖啡提取物的应用范围。
In order to prepare a coffee extract that retains the original aroma and taste of coffee, a step-by-step extraction method was adopted. First,cyclohexane was used to extract the coffee oil with rich coffee aroma. Under the conditions of 40 meshes of crushed coffee, 4︰1 mass ratio of cyclohexane to coffee beans and 90 min of reflux time, the yield of coffee oil was 9.2 %. The yield of coffee concentrate is 28.3 %, and the coffee oil and coffee concentrate are combined into water-oil soluble coffee extract by combining emulsification and embedding technology, which greatly expands the application range of coffee extract.
