摘要
淮扬菜是我国著名的四大传统菜系之一,独特的菜品文化及品质,深受消费者的喜爱。面对新时期的餐饮文化及现代人的饮食追求,加快淮扬菜标准化进程对于“保品质、促管理、树品牌”具有重要意义。淮扬菜在标准化实现中,要立足自身文化特质,在标准化进程中实现新的发展。本文立足淮扬菜研究,分析了淮扬菜标准化的重要性及主要内容,并在此基础之上,从加快建立完善标准化体系、成立淮扬菜标准化技术委员会等方面具体阐述了淮扬菜标准化的实现路径。
Huaiyang cuisine is one of the four famous traditional cuisines in China.Its unique culture and quality have won the favor of consumers.In the face of the catering culture in the new era and the catering pursuit of modern people,speeding up the standardization process of Huaiyang cuisine is of great significance for"ensuring quality,promoting management and building brand".In the process of standardization,Huaiyang cuisine should be based on its own cultural characteristics and achieve new development in the process of standardization.Based on the research of Huaiyang cuisine,this paper analyzes the importance and main content of Huaiyang cuisine standardization,and on this basis,from the aspects of speeding up the establishment and improvement of standardization system and the establishment of Huaiyang cuisine standardization technical committee,expounds the realization path of Huaiyang cuisine standardization.
